Spanish Rice

This Spanish Rice recipe is a great side dish that can be easily turned into a meal by adding cooked chopped chicken and a can of black beans (rinsed & drained).

Ingredients:

1 to 2 Tbsp olive oil
½ medium onion (chopped)
2 cloves garlic (minced) (or 2 tsp garlic paste)
2 cups brown rice
10 oz can diced tomatoes
4 oz can green chilies
1 tsp sea salt (or to taste)
4 cups vegetable broth

Directions:

Heat olive oil in a dutch oven or deep skillet over medium high heat.

Add onion, garlic and brown rice, sauté 3 to 5 minutes.

Add remaining ingredients and bring to a boil, reduce heat to a simmer, cover and cook about 40 to 45 minutes.  Add more broth if it is too dry or you need to cook the rice longer.

Garnish with fresh chopped cilantro and sliced avocado. Enjoy this Spanish Rice dish with 6 others (makes 6 servings).
