Grilled Chicken Cutlets with Southwestern Citrus Marinade

Grilled Chicken Southwestern Marinade

Ingredients:

2 boneless, skinless chicken breasts

Southwestern Citrus Marinade:

½ cup cilantro leaves
¼ cup grapefruit juice
2 tbsp lemon juice
¼ cup olive oil
1 jalapeno pepper, halved lengthwise and sliced
½ tsp kosher salt

Instructions:

Mix all marinade ingredients together in a small bowl.

Slice chicken breasts in half horizontally. Place cutlets in a resealable plastic bag and pour in marinade. Marinate cutlets at least 2 and up to 8 hours ahead of cooking.

Place cutlets on hot, oiled grill and cook for about 2 minutes per side, just until there is no pink remaining.
