Dice 1/2 a small avocado Mash half and leave the other half diced. Add to 3/4 cup diced chicken. Squeeze on a little lemon juice, just a teaspoon or so. Add 1/4-teaspoon salt. At this point you can add whatever other chicken salad ingredients you like: a tablespoon of chopped cilantro, a tablespoon of diced onion, a tablespoon of diced celery etc.
