The Benefits of Celery Juice

On The Kaufmann Diet, you are eliminating most beverages and primarily drinking water. Most other beverages are off limits, usually due to the sugar, additives, etc. This is a huge departure from the way most Americans live––unfortunately, most people regularly drink sodas and sugar laden drinks, which are increasingly implicated in a wide variety of health problems.

While you are encouraged to drink plenty of water (ideally filtered), one exception is juicing fresh vegetables, spices (ginger, turmeric, etc.) and some Kaufmann Diet-approved fruits. 

Juicing can be hugely beneficial, because you can get an abundant dose of nutrition in a small package. Juicing is excellent for concentrating the nutrients found in fruits and vegetables and giving you more of a “therapeutic dose” of those nutrients. Particularly, many of the anti-fungal nutrients found in carrots, greens, garlic, ginger can be beneficial in the concentrated amounts found in fresh-squeezed juice. 

The problem with juicing is that it will also concentrate sugar inherent in fruits and vegetables. This is something to be cautious of, and certainly, even fresh-squeezed vegetable juice should never be your primary source of hydration on The Kaufmann Diet. 

All that said, one vegetable that you should definitely consider juicing regularly is celery. Celery is packed with nutrients, low in calories and contains mostly water. Some of the benefits of celery juice are noteworthy, so much so that it has become a trendy beverage for health types. 

Here are some of the benefits of celery juice:

Celery juice is high in nutrition.

Celery juice contains high amounts of a wide array of nutrients, including folate, manganese, pantothenic acid, potassium, and vitamins A, B2, B, C, and K. It is also rich in array of other phytonutrients and anti-oxidants, low in sugar and calories, and a good source of hydration. 

Celery juice has cardiovascular benefits.  

Some of the most pronounced benefits from celery juice are for the cardiovascular system. Celery juice has been shown to support healthy cholesterol levels by reducing levels of “bad” cholesterol. A component of celery juice known as 3-n-butylphthalide (3nB) has shown to be useful in lowering blood pressure in those with hypertension. 

Celery juice might be beneficial against cancer. 

Some of the antioxidants found in celery juice may help protect against cancer. One known as luteolin is thought to help prevent cancer from metastasizing and prevent angiogenesis in cancer cells. 

Celery juice has potential anti-fungal properties. 

This makes celery juice an important addition to The Kaufmann Diet. Along with other anti-fungal vegetables and spices, celery is definitely something you should consider regularly juicing to glean not only the other benefits, but the anti-fungal benefits as well.
