Enjoy this Kaufmann 1 approved Springtime Salad during the spring! This recipe will yield 8 servings. You can also create your own Kaufmann Salad in a previous recipe that we posted to the website.

Kaufmann One

 

 

 

Ingredients:

4 medium tomatoes (or 8 to 12 plum tomatoes), diced
1 long cucumber (or 2 small cucumbers) peeled and diced
¼ to ½ sweet white onion, minced
8 small red radishes, diced
1/3 cup chopped fresh Italian parsley
1 cup coarsely chopped arugula (optional)
2 to 3 tablespoons extra-virgin olive oil
1 to 2 tablespoons strained fresh lemon juice
Salt and fresh-ground pepper, to taste

 

Directions:

Mix tomatoes, cucumber, radishes, onion, parsley, and arugula (if using) in a glass bowl. Add olive oil, lemon juice, salt, and pepper. Serve cool or chilled.
