This meal is quick and easy to prepare, and tastes great! You can switch it up to your liking by adding in your favorite protein, veggies, nuts, and quinoa!
This quick and easy dish is Doug Kaufmann’s favorite.
1 tomato, diced
1 small onion, diced
1 cucumber, diced
1 avocado, diced
½ cup black olives, diced
3 hard boiled eggs (sliced)
smoked salmon or cubes of beef summer sausage
olive oil (or grapeseed oil)
5 tablespoons freshly-squeezed lemon juice
Dice and combine first six ingredients, add sliced boiled eggs and smoked salmon.
Top with olive oil and freshly squeezed lemon juice.
Makes 2 servings.
