Spicy Sweet Quinoa

This Kaufmann 2 Spicy Sweet Quinoa recipe will make 8 to 10 servings.

Ingredients:

1 cup quinoa (rinsed & drained)
2 cups water
¼ cup butter
½ tsp garlic powder
1 tsp salt
1 tsp apple cider vinegar
¼ cup pepitas (pumpkin seeds)
¼ cup crumbled Feta cheese
¼ cup dried unsweetened blueberries or cranberries
¼ cup chopped fresh mint
2 tsp Monk Fruit (brown sugar blend) sweetener
¼ to ½ tsp cayenne pepper

 

Directions:

In a large pot, combine quinoa, water, butter, garlic powder, salt and vinegar.

Cook until quinoa is done, and light and fluffy, about 5 to 10 minutes.  Set aside and let cool.

In a small bowl, combine pepitas, feta, dried blueberries, mint, brown sugar substitute and cayenne pepper.  Stir until evenly combined.

Stir mixture into quinoa and serve cold. Enjoy your Spicy Sweet Quinoa.
