Quinoa Brittle Kaufmann 2 Recipe

Ingredients:

½ cup honey
2 Tbsp coconut oil
2 tsp vanilla extract
Pinch of salt
1 cup quinoa (rinsed, drained & dried)
1 cup chopped nuts (pecans, cashews, almonds, etc.)
½ cup raw seeds (hemp, chia, flaxseed, etc.)
12 oz dark sugar free chocolate

 

Directions:

Preheat oven to 350℉.  Line a 13×9 rimmed baking sheet with parchment paper.

In a small saucepan. melt honey and oil over low heat.  Stir in vanilla and salt then remove from heat and let cool.

Combine quinoa, nuts and seeds in a medium bowl.  Stir in cooled honey mixture and combine thoroughly.

Pour mixture into the middle of the prepared baking sheet, this will spread out while baking.

Bake for 15 to 20 minutes until quinoa is golden brown and crisp.  Let cool completely.

While cooling, melt chocolate then drizzle over cooled baked quinoa.  Freeze for 15 to 20 minutes, then break apart into pieces and enjoy.

 

Tip:

Sprinkle on extra toppings before baking.  Shredded coconut, more nuts, dried sugar free berries, etc.
