Mexican Style Shrimp or Crab Cocktail

Ingredients:

8 ounces cooked and chilled shrimp and/or crab, cut into 1 inch pieces
1/3 cup diced jicama
1/3 cup diced cucumber
2-3 tablespoons finely chopped white or red onion, rinsed in cold water and drained
1 firm, ripe avocado, cut into chunks
1/4 cup roughly chopped cilantro

Kaufmann 1 Cocktail Sauce:
1/4 cup sugar-free ketchup, homemade or store-bought
1/4 cup freshly-squeezed lime juice
zest of one fresh lime
2-3 teaspoons Kaufmann 1 friendly hot sauce. If unavailable, substitute 1/2-1 teaspoon dried red pepper flakes

Directions:

Mix all sauce ingredients together in a small bowl.

Combine shrimp and vegetable in a medium bowl, reserving cilantro for garnish.

Pour cocktail sauce over and toss gently to thoroughly coat all ingredients.

Divide mixture into serving dishes and top with cilantro. Serve immediately.

For 2-3 servings
