Garlic Roasted Sweet Potatoes & Onions

kaufmann-2-microIngredients:

4 medium Sweet Potatoes, peeled and cut into 2” chunks (about 2 1/4 pounds)
2 medium sweet Vidalia Onions, rough cut
4 cloves Garlic, Minced
2 Tbs Olive Oil
Sea Salt & Fresh Ground Pepper to taste

 

Instructions:

Preheat oven to 425 degrees.

Combine all ingredients on roasting pan and toss to coat.

Bake for 30 to 35 minutes, stirring occasionally until potatoes are tender
