This Savory Sweet Potato Mash is a great Kaufmann 2 side dish recipe for your next dinner.
6 medium sweet potatoes
1 cup full fat coconut milk
2-3 tsp red curry powder (add in tsp at a time, and add additional teaspoons to taste)
2-3 tbs maple syrup
2 tbs butter
Preheat oven to 375 degrees.
Grab your baking sheet and line with parchment paper.
Wash and dry sweet potatoes, and put a few slits in the top.
Bake in the oven for 60-75 minutes, or until cooked thoroughly and they are soft.
Remove sweet potatoes from oven and let cool. When they have cooled enough to handle, remove skin and mash.
In a small saucepan, warm coconut milk. Once warmed, add maple syrup, and then add the red curry powder. I suggest adding a teaspoon at a time and taste after each addition to find the right amount per your taste.
Add butter and coconut milk to sweet potatoes and mix.
They are ready to serve!
** If your sweet potato mash needs to be warmed up, you can place in the oven at 375 degrees for 10-15 minutes.
