This Kaufmann 1 approved Cucumber Soup recipe will yield about five cups.
2 cups plain yogurt
One 10 ¾ can of chicken broth
1 clove garlic, crushed
Walnuts for garnishing
Peel cucumbers and cut into bite-size cubes. Salt heavily and set aside. Spoon yogurt into a medium casserole dish and stir in chicken broth and garlic until smooth. Rinse the salt from the cucumbers and add them to chicken broth mixture. Add salt to taste. Chill in the refrigerator for several hours and garnish with chopped walnuts before serving.
