What Is Gelatin?

Gelatin is a translucent, colorless, flavorless food ingredient derived from collagen, which is a protein found in the connective tissues, bones, and skins of animals, primarily cows and pigs. When you make beef stock, put it in the fridge, and it turns into a gel-like consistency… that is gelatin. It’s commonly used as a gelling agent in food production to give foods a jelly-like consistency. 

Gelatin is often found in desserts like jellies, marshmallows, and gummy candies––many of the foods that are not encouraged on The Kaufmann Diet. So while you shouldn’t go open a cup of jello, which is also full of sugar and food colorings and other ingredients, gelatin, itself might have some health benefits. Like anything, the source of gelatin matters. While gelatin in the form of processed foods might not be a great option, gelatin in the form of grass-fed beef stock might have some good health benefits.

Beef stock or stock made from the bones of healthy animals is a great staple to have on hand, as it can form the base of many healthy foods and soups and contribute to a depth of flavor. Homemade beef stock can be full of nutrition, including the presence of the inherent gelatin.  

A Good Protein Source

Gelatin is a good source of protein, containing essential amino acids like glycine, proline, and hydroxyproline. These amino acids are important for various bodily functions, including muscle repair, skin health, and collagen production.

Joint Health

Some studies suggest that the collagen in gelatin may help improve joint health and reduce joint pain associated with conditions like osteoarthritis. However, more research is needed to confirm these effects definitively.

Gut Health 

Gelatin may help support gut health by improving digestion and promoting the growth of beneficial gut bacteria. The amino acids in gelatin, particularly glycine, may help strengthen the intestinal lining and reduce inflammation in the gut.

Skin Health

Collagen is a key component of skin tissue, and consuming gelatin may help improve skin elasticity and hydration. Some people believe that regular consumption of gelatin may help reduce the appearance of wrinkles and promote overall skin health.

Hair and Nail Health

Collagen is also important for hair and nail health, so consuming gelatin may help strengthen hair and nails and reduce brittleness.
