Kaufmann OneIngredients:

1 large egg
1 small zucchini (shredded)
1 medium carrot (shredded)
4 scallions (sliced thinly)
4 garlic cloves (minced)
1 lb ground turkey
1 lb Italian turkey sausage
½ cup ground quinoa flakes

Directions:

Preheat oven to 375℉.  Line a baking sheet with parchment paper.

In a large bowl, beat the egg then add zucchini, carrots, scallions and garlic.

Combine ground turkey and turkey sausage together, in another large bowl.  Add egg mixture and quinoa flakes until well combined.

Form 1½” meatballs and place on parchment paper.

Bake meatballs for 25 to 30 minutes or until cooked through. Makes 4 to 6 Servings

Tips:

You can eat these by themselves, or add some marinara to dip your meatballs in. For Kaufmann 2, you can sprinkle tops of meatballs with parmesan cheese.
