2 lbs Chicken (breast, thighs, tenders, legs)
1 Cup Amaranth Flour
1/2-Cup Crushed/Powdered Walnuts
1/4 Cup of Flax Seeds
3 Large Eggs
1/2 Tsp Salt
1/2-Tsp Cumin (optional)
1 Tsp Cayenne Pepper (Spicy Version)
3/4 Cup of Grape Seed Oil
Cut Chicken into strips or nugget sized pieces
Mix Amaranth Flour, Walnuts, Flax Seeds, Salt, Cumin
In a Mixing bowl. Beat eggs in separate bowl.
Place Grape seed oil in a medium sized skillet on medium heat
Dip chicken into the eggs and dust them in the dry flour mixture and place in the hot skillet.
Cook chicken on each side for 3-5 Minutes or until chicken is fully cooked.
