Pecan Bars

These easy to make Pecan Bars are rich and nutritious; they are a delicious snack, that everyone will love, including your pickiest eaters. The best part is…. THEY’RE GUILT-FREE!

Ingredients:

2 Cups Chopped Pecan’s
1 Cup Sliced Almonds
1/4 Cup Flax Seed Meal
1/4 Cup Raw Local Honey
2 Tbsp Grass Fed Butter
2 Tbsp Coconut Oil
1 Tsp Cinnamon (Optional)
1/2 Tsp Salt or to Taste
1 Tsp Vanilla (Optional)
1/2 Tsp Liquid Stevia

Directions:

Place Butter and Coconut oil in a skillet on medium heat until melted.
Add chopped pecan’s and sliced almonds and coat them with the melted butter and coconut oil.

Stir in the remaining ingredients and constantly stir the mixture for 5-8 minutes until the nuts are evenly coated and crunchy. If you like more crunch you can cook them a little longer, Be Careful not to burn them.

Take 2 small Muffin pans and (6 muffin molds in each) and firmly press the Nut Bar mixture into each muffin mold, place the pans into the freezer for 1-2 hours.

To remove the Pecan bars, slightly flex the pan by twisting it (only works with thinner pans) then slide a plastic knife between the Pecan bar and sides which will pop them loose.

Quick Notes:

After you have cooked the ingredients you can also add your favorite dried fruit like shredded coconut or dried cranberries.

Cupcake Liners/cups don’t work too well because the nut bar sticks to them. You can cut small pieces of parchment paper to insert into each cupcake mold.
