Ingredients:
1 dozen eggs, hard cooked, peeled and halved, yolks removed and divided into two bowls
Option one:
Mash 6 of the yolks until smooth. Squeeze about a teaspoon of fresh lime juice over the mixture and sprinkle with a bit of salt. Add about a quarter of a ripe avocado, mashed, and mix thoroughly. If desired, add about 2 teaspoons very finely minced shallot, and mix well to combine. Spoon yolk mixture into whites. Garnish with minced chives.
Option two:
Mash 6 of the yolks until smooth. Squeeze about a teaspoon of fresh lemon juice over the mixture and sprinkle with a bit of salt. Add 1/2 teaspoon mustard and 2-3 teaspoons olive oil. Add 2-4 teaspoons very finely minced Kaufmann 1-friendly dill pickles, and mix well to combine. Spoon mixture into whites. Garnish with fresh or dried dill.
