50 years ago, a “soda” was considered a treat, something enjoyed every once in a while. Today, consumption of sodas and sugary drinks have more or less replaced water altogether, for many people. Today, Americans consume over 120 lbs of sugar per person per year, on average. This is more than at any other time in history. A big part of this consumption of sugar is due to the wide-spread availability of sugary beverages, soft drinks and soda.

In light of this, it is unsurprising how diseases like cancer, diabetes, and heart disease –– all diseases with at least some link to sugar consumption –– are so rampant. Sugar consumption in the quantities that Americans consume the stuff in turns out to be quite detrimental to our health, but as if this was not enough, there is another insidious role that sugar may play in our health. Sugar can potentially feed a pathogenic fungal infection; these types of infections can create a whole list of symptoms in humans. Despite this, your doctor would likely rarely implicate fungus in any of your health problems, even in cases where the cause of the symptoms are unknown. Regardless, published throughout the scientific literature is evidence that this can and does happen, and that perhaps it is even more often than many would assume.

Because fungi’s favorite food is sugar, people with fungal issues often crave sugar and consume quite a bit of it. For this reason, if you crave sugary drinks or soda or have a hard time giving those things up, this may be evidence that something else is driving your cravings.

In order to combat the ravages of fungal infections, the Kaufmann 1 Diet was created. The Kaufmann 1 Diet eliminates the majority of sugar from the diet, along with foods like grains, corns, starches, and alcohol. The Kaufmann 1 Diet seeks to eliminate foods from the diet that would potentially feed a pathogenic fungal infection, and foods that are known to be contaminated with fungal poisons, known as mycotoxins.

Many people going on the diet report great difficulty giving up sugar, initially, when going on the diet. Many often go through a period of feeling worse than they did before, a period known as a “Herxheimer reaction”. However, after a period of time spent on the diet, many people report relief from symptoms that have plagued them for years, all from a few simple dietary changes, namely eliminating sugar.

Regardless of whether you feel like you are suffering from a fungal condition or not, it is best to eliminate the sugary beverages, soft drinks, and sodas from your diet. Your health will thank you in the long run.
