Crustless Quiche

Ingredients:

2 Tablespoons plus 2 teaspoons arrowroot powder
1 ¼ cup unsweetened almond milk
2 large eggs
2 large egg yolks
1-cup heavy cream
½ teaspoon kosher salt (more or to taste if using table salt)
Pinch cayenne pepper
Butter or oil for pan

Directions:

Preheat oven to 425°.

Butter or oil 7 X 11 inch glass baking dish.

Put arrowroot in large mixing bowl and whisk in about half of the almond milk.

Add the eggs and egg yolks and whisk until well blended. Add remaining almond milk, cream and seasonings.

Add fillings and pour into prepared pan.

Bake about 25 to 30 minutes or until a knife inserted in the middle comes out clean.

Fillings:

1 medium diced red bell pepper, sautéed until soft
2 teaspoons fresh thyme, chopped
4 ounces fresh goat cheese

Vary filling ingredients to your personal preference.

Suggestions:

Fresh or thawed frozen spinach, squeezed until dry
Sautéed shallots or onions
Cooked bacon, ham or chicken
Sun-dried tomatoes
Feta cheese
