Ingredients:

1 small onion, finely chopped
3 tablespoons butter
1 clove garlic minced
1 egg
1-pound ground beef
½ cup well drained, thawed frozen chopped spinach
½ cup beef broth
1-teaspoon salt
¼ teaspoon coarsely ground black pepper
Chopped parsley for garnish

 

Instructions:

In a large frying pan, sauté onion in 2 tablespoons of butter until soft and lightly browned. Remove from heat and mix in minced garlic.

Beat egg in medium bowl, and add in onion mixture, ground beef, spinach, 2 tablespoons beef broth, salt, and pepper. Shape into 4 oval patties, about 1 inch thick.

Add 1-tablespoon butter to same frying pan used to sauté onions. Place patties in pan and brown over moderately high heat. Cooking about 4 minutes on each side, turning once. Remove patties, and place on a warmed platter to keep them warm.

Add remaining broth (6 tablespoons) to frying pan. Cook, stirring to mix in the pan drippings. Bring to a low boil for about 30 seconds and pour over patties. Sprinkle with parsley, and serve.
