Basil Pesto Sauce Kaufmann 2 recipe.
1 cup fresh basil
1 cup fresh spinach
½ cup pine nuts (or walnuts)
2 to 3 cloves of garlic (crushed)
pinch of sea salt
fresh ground black pepper
⅔ olive oil
½ cup grated Parmesan cheese
Put basil, spinach and pine nuts into a food processor and pulse.
Add the garlic, salt and pepper; pulse some more.
Start processor and slowly pour in olive oil and process until smooth.
Put the mixture into a large bowl and stir in Parmesan cheese.
Serve over chicken, fish, steamed or roasted vegetables or Kaufmann friendly pastas made with beans.
Make ahead and freeze. For better flavor, leave out the Parmesan cheese and freeze. When ready to use, let the pesto thaw and then add the cheese. Freezing with the cheese changes the flavor.
You can use all basil leaves instead of the spinach. Use 2 cups basil leaves and omit the spinach.
