This Amaranth Pancakes recipe has a been adapted for Kaufmann 1 from Bob’s Red Mill Recipe. Makes 12-4” pancakes.

Kaufmann One


2 eggs, beaten
½ cup almond milk
2 teaspoons oil
½ cup amaranth flour
½ cup tapioca flour
1/3 cup arrowroot starch
½ teaspoon cinnamon
2 teaspoons baking powder
¼ teaspoon sea salt



In a medium mixing bowl, beat eggs. Then add almond milk and oil. Add the remaining ingredients, mixing well to combine. Heat griddle to medium high heat and cook until bubbly; turn Amaranth Pancakes over and until done, about 1-2 minutes more.

Serve with fresh berries, sweetened with stevia, if desired or with honey butter if you are on Kaufmann 2. To make Kaufmann 2 Honey Butter for your Amaranth Pancakes mix ½ cube of softened butter with 1 tablespoon of honey.
