Almond Cookies are so tasty! This Kaufmann 1 recipe will yield about 15 cookies.
½ cup monk fruit (or other granular sweetener)
½ tsp salt
1 Tbsp vanilla
1 cup almond butter
Preheat oven to 350℉.
Mix sweetener, salt, egg and vanilla together in bowl until well combined. Add in almond butter and stir until thick dough forms.
Measure out Tbsp sized balls of dough, flatten to form into a cookie shape with hands and place on a parchment lined baking sheet.
Once all cookies are formed, make fork hatch marks on tops.
Bake for 12 to 14 minutes.
Let cool completely. They will be very soft until cooled.
