Zucchini Bread Kaufmann 1 recipe. This recipe will render a single loaf.
Olive oil (or coconut oil) for greasing pan
2 cups almond flour
½ tsp sea salt
½ tsp baking soda
1 tsp ground cinnamon
2 large eggs (slightly beaten)
¼ cup butter (melted & cooled)
¼ cup stevia powder
1 cup grated zucchini
½ cup chopped pecans
Preheat oven to 350℉.
Grease a 5×7” loaf pan or line with parchment paper.
In a large bowl, combine almond flour, salt, baking soda and cinnamon with a wire whisk.
In another bowl, add eggs, butter and stevia.
Add wet ingredients to dry ingredients and blend thoroughly. Fold in zucchini and pecans.
Scoop batter into prepared pan and bake for 35 to 50 minutes, testing by inserting a toothpick in center until it comes out clean.
