Ingredients:
12 oz of cream cheese
2 eggs
1tbsp fresh lemon juice
1/2 cup heavy whipping cream
1 tsp of cinnamon
stevia to taste (go sweeter than you may think)
Directions:
Microwave cream cheese for 15 seconds to make it easier to mix without making lumps. In a large mixing bowl, combine cream cheese, lemon, stevia and 1 egg. Stir until well blended and as lump-free as possible. Add next egg and mix thoroughly. Fold in whipping cream until just mixed-do not over beat.
Pour into crust. To use a springform pan, increase the recipe by 1/2, or you will end up with a very flat cheesecake.
Bake at 350 degrees for 35-40 minutes, or until a toothpick inserted comes out clean. Remove from the oven and cool to room temperature. Then chill for at least 2 hours. The top will crack while cooling. serve with sliced strawberries or other Kaufmann 1 friendly fruits.

Makes one 9 to 10 inch pie.
