Kaufmann 2 Vegetarian Coconut Curry Recipe.
1 Tbsp butter or oil
½ white onion (chopped)
2 small broccoli heads (chopped)
1 can coconut milk
2 Tbsp red curry paste
1 can chickpeas (rinsed & drained)
1½ tsp tapioca flour
On medium heat, melt butter, or oil, in a large saucepan. Add onion and broccoli. Sauté until broccoli is tender and onions are translucent.
Stir in coconut milk and bring to a simmer.
Stir in curry paste; mix well. Add chickpeas and tapioca flour. Mix until combined and heated through.
Enjoy your Vegetarian Coconut Curry alone or over quinoa or cauliflower rice.
