Summer Salad with Raspberry Vinaigrette


Summer Salad

5 ounce package of spring lettuce mix
2 cups shredded rotisserie chicken
1/2 medium red onion, halved and thinly sliced
1 cup mixed berries, such as strawberries, raspberries and blueberries
1/2 cup yellow cherry tomatoes, halved
1/2 cup walnuts, roughly chopped
4 ounces goat cheese, crumbled

Toss all salad ingredients gently in a large salad bowl.

Raspberry Vinaigrette
½ cup raspberries, fresh or frozen
¼ cup coconut vinegar
¼ cup olive oil
¼ cup hemp oil or use all olive oil
1/4 teaspoon lemon juice
¼ teaspoon pepper
1/8 teaspoon Salt
2-4 drops NuNaturals liquid stevia, or to taste

Add all the Raspberry Vinaigrette ingredients to a blender and blend well until raspberries are pureed. Taste and adjust seasoning to your liking. Drizzle dressing over salad and toss. Serve immediately.
