South Of The Border Quinoa

SOUTH OF THE BORDER QUINOA Kaufmann 2 Friendly

Serves one as a side dish. Double recipe to serve as a main course. (Quinoa is a complete protein!)

Ingredients:

1/2 cup cooked quinoa
about a tablespoon rinsed black beans (These are Kaufmann 2, so omit if you are on Kaufmann 1.)
1 teaspoon minced green onion
1-2 tablespoons chopped fresh cilantro

Directions:

Mix all ingredients together in a small bowl.

In a small lidded jar or plastic container, add:
2 tablespoons olive oil
1 tablespoon freshly squeezed lime juice
1/2 teaspoon cumin
1/4 teaspoon lime zest
salt and pepper to taste

Tighten lid to container and shake vigorously to combine. Pour over quinoa mixture and stir thoroughly to combine. Spoon onto a serving plate and serve immediately.

Quick Notes:

You can make this ahead of time and store in the refrigerator, but add the cilantro right before serving.
