Serves two.
2 Cups Greek yogurt, divided
1/4 cup canned pumpkin puree
1/2-teaspoon pumpkin pie spice
1/4-teaspoon cinnamon
Stevia to sweeten
1/4 cup diced, toasted nuts
Mix 1 cup of the yogurt with the next three ingredients. Add stevia to sweeten to taste.
Spoon about 1/4 cup of the pumpkin yogurt into 2 tall glasses. Carefully layer about 1/4 cup of the plain yogurt into each glass over the pumpkin yogurt, and top with about a tablespoon of diced toasted pecans or walnuts. Repeat layering, topping the parfaits with nuts.
