Layered Salad

This is the perfect way to start a meal – or, let this be its own meal! It’s the perfect mix of veggies and protein. Feel free to replace iceberg lettuce with romaine, kale, or any other favorite leafy green. The Kaufmann-friendly dressing adds the perfect zest to this perfect salad.

Salad:

1 head iceberg lettuce (chopped)
4 tomatoes (cut into wedges)
1 cucumber (chopped or sliced)
5 ounces baby spinach
1/2 red onion (quartered and thinly sliced)
8 Hard Boiled Eggs (chopped)
Salt and freshly ground black pepper
1 pound bacon (cooked and chopped)
4 green onions (thinly sliced)
4 ounces crumbled goat cheese
One 10-ounce bag frozen green peas (thawed) (Kaufmann 2)
Fresh chopped dill or dried

Dressing:
3/4 cup mayonnaise
3/4 cup sour cream
1 1/2 tsp Xylitol

Directions:
Layer the salad ingredients in a clear glass bowl for presentation. Put a good layer of lettuce on the bottom, then tomato, cucumber, spinach, onion and eggs. Season egg layer with salt and pepper. Next layer the bacon, green onion, cheese then peas.

Mix the mayonnaise, sour cream and xylitol in a small bowl and pour over the top of the layered dish. Garnish with dill. Cover and keep refrigerated until served.
