Ingredients:

1 cup chopped raw almonds
1 cup chopped raw pecans
1 cup chopped raw cashews
1 ½ cups quinoa flakes
1 ½ cups coconut flakes
1 tsp. cinnamon
½ to 1-cup of maple syrup
½ tbsp. vanilla extract
½ cup melted coconut oil
1-½ cups dried blueberries (optional)
Cinnamon
Salt

 

Directions:

Preheat your oven to 300 degrees.

Line baking sheet with parchment paper and set aside.

In a large bowl, add chopped nuts, quinoa flakes, coconut flakes, and cinnamon. Do a quick stir to make sure all the ingredients are mixed together.

In a medium bowl add maple syrup, vanilla extract, melted coconut oil, and mix until well combined.

Add maple syrup mixture to the granola mixture and stir until well coated.

Spread granola onto baking sheet and sprinkle with some cinnamon and salt.

Place granola in the oven and bake for 30 minutes. You will want to stir the granola every ten minutes. If you are adding the dried blueberries, you will want to do this during the last ten minutes of baking. Take the cookie sheet out of the oven and sprinkle dried blueberries on top of granola. You can use a spatula or parchment paper to push the blueberries into granola and finish baking.

Remove from oven, and let granola cool completely. Once cooled you break up the granola and store in an airtight container.
