Vanilla Cake with Blackberry Icing

The wait is over, Kaufmann 2 Friendly Cake! Nobody will be missing a traditional style cake after tasting this.

Vanilla Cake

Ingredients:

2 3/4 cups almond flour
1 cup arrowroot flour
1/3 cup flax seed meal
2 teaspoons baking soda
1 teaspoon cinnamon
6 eggs
2 tablespoons vanilla extract
1/3 cup of honey
25-35 Drops of liquid stevia
1 tablespoon apple cider vinegar

Directions:

In a medium bowl, combine almond flour, arrowroot, flax meal, cinnamon and baking soda. In a food processor (or a different bowl), blend eggs, stevia, honey, vanilla extract and apple cider vinegar for 3 to 5 minutes, or until frothy. Pour wet ingredients into dry ingredients and mix together.

Pour the batter into a well-greased 9”x13” glass pan and bake at 350º for 28-34 minutes, or until a toothpick inserted into center of cake comes out clean. Set cake out to cool.


Blackberry Icing

Ingredients:

8 oz cream cheese
1 cup Blackberries or Raspberries
15 Drops of Liquid Stevia
3 tablespoon honey
1 tablespoon vanilla extract
1/4 cup heavy whipping cream

Directions:

Combine all ingredients in a food processor and blend until smooth. Wait until cake is cool to apply icing.
