Elderberry Gummies

kaufmann-2-microElderberry Gummies recipe for Kaufmann 2. This recipe will require an additional piece of equipment (mold) and Elderberry Syrup. We have linked a previous recipe for our Elderberry Syrup or it can be substituted. Enjoy!

Needed Equipment:

Gummy Bear Mold(s)

Ingredients:

Melted coconut oil (for molds)
½ cup hot water
1 cup elderberry syrup
¼ cup gelatin
½ Tbsp honey (optional)

Directions:

Brush gummy bear mold(s) with melted coconut oil and set aside.

Add ½ cup of water to a small saucepan, heat over low heat. You want the water to be hot but not boiling. 

While the water is heating up, add elderberry syrup to a medium sized bowl and whisk in gelatin. Mix until combined and let sit for a minute to gel. 

Quickly add hot water to elderberry mixture and whisk until smooth, then mix in the honey, if adding.

Pour the mixture into your mold(s), and refrigerate for at least 2 hours.

Pop out gummies, and store in an airtight container in the fridge. You can use parchment paper to put in between each layer of gummies.

 

Tips:

You can make a variety of gummies using different liquids.  Just replace the 1 cup of elderberry syrup with something else. You can make veggie or fruit gummies, using fresh vegetable or fruit juice, or a mixture of both! You can sweeten with honey, maple syrup, and of course stevia.
