This concoction is at the same time the simplest ever dessert, yet worthy of serving to company. It is sugar free, and dairy free, Kaufmann 1-friendly, quick to prepare, loaded with healthy fats, and rich enough that few would be tempted to over-indulge. In my book, that pretty much makes it a perfect dessert!
Serve a small dollop in a pretty dessert bowl, surrounded by fresh whole strawberries speared with cocktail toothpicks for dunking. Or, for an unexpected surprise, serve the mousse with chunks of fresh coconut alongside.
1 can organic coconut milk, refrigerated overnight
1/3 cup organic cocoa powder
xylitol to taste (about 1/3 cup)
Remove lid from chilled coconut milk. Carefully spoon out the solid portion, which will be on top, and place into a medium sized mixing bowl.
Add cocoa powder and xylitol and whisk until completely smooth.
Refrigerate until time to serve.
