Ingredients:
1¼ cups almond flour
5 Tbsp ground psyllium husk powder
2 tsp baking powder
1 tsp sea salt
2 tsp apple cider vinegar
3 egg whites
1 to 1¼ cups boiling water
Sea salt, poppy or sesame seeds (optional) for topping
Directions:
Preheat the oven to 350°F with a rack in the lower position.
Mix the dry ingredients in a large bowl with a spatula.
Stir in the cider vinegar and egg whites.
With a wooden spoon or a hand mixer, add the boiling water and mix for about 30 seconds. Don’t over mix.
Moisten hands with water and break the dough into 6 or 8 equal pieces. Roll with hands into balls and place on a greased baking sheet several inches apart, they do puff up.
If using salt or seeds, brush water on tops of rolls then sprinkle with topping.
Bake on the lower rack for 50 to 60 minutes, depending on the size of your rolls. They’re done when you hear a hollow sound when tapping the bottom of the roll.
Quick Notes:
Make larger rolls for hamburger buns or long for subs.
