This Cod with Tomato Basil salsa should provide a good entree for four guests or family. This recipe is for the Kaufmann 1 diet.
Four 6-ounce cod fillets
Salt and fresh ground black pepper to taste
1 clove of garlic
8 ounces Italian plum tomatoes (about 2)
½ cup packed basil leaves
½ teaspoon coarse salt
2 tablespoons freshly squeezed lime juice
Pinch of cayenne pepper
Preheat oven to 450 degrees. Line a baking dish with foil. Season both sides of fillets with salt and pepper. Lay fish in baking dish and bake for about 12 minutes, or until cooked through.
Peel and smash clove of garlic. Core and cut each tomato into 8 chunks. In a food processor, pulse garlic, tomatoes, basil, salt, lime juice, and cayenne pepper into a chunky puree.
Serve ¼ cup of salsa atop each fillet.
