Almonds, coconut, and chocolate…what does that bring to mind? Well, if you’re on Kaufmann 1, hopefully something healthy and delicious not filled with sugar and artificial flavors. Almonds and coconut have a natural affinity for one another, and when you add in chocolate, well, it just takes it to a whole different level of decadence. (And if you don’t care for chocolate, the almond-coconut milk is delicious on its own.)
Ingredients
1 1/4 cup of almond meal (can be made from blanched or unblanched almonds) OR
1/ 1/2 cups whole almonds
1/2 cup unsweetened dried coconut
5 cups water
1-teaspoon vanilla
5 drops liquid stevia or 1 teaspoon pure maple syrup (for Kaufmann 2)
2 teaspoons unsweetened cocoa
4-5 drops of liquid stevia, or more to taste.
Instructions
In a high-speed blender, place almonds or almond meal, coconut, and water. Blend at high speed for 1 minute. Add vanilla and sweetener and blend to combine.
If desired, strain through a fine mesh sieve. (This will make for a more homogenous texture but is not necessary.)
For one serving, place one cup of the almond-coconut milk back into the blender. Add cocoa, stevia, and some crushed ice (about 1/2 cup) if desired. Blend to combine and serve immediately.
