Ingredients:
2 cups grated cauliflower (You can do this with a box grater or in a food processor.)
1/4 cup egg whites
1 cup fresh mozzarella cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
turkey pepperoni slices
Directions:
Pre-heat oven to 450.
Cook grated cauliflower in a dry skillet over medium heat, stirring constantly, until softened, about 5 minutes. Pour cauliflower into a large bowl and allow to cool.
In a food processor or blender, mix remaining ingredients. Remove mixture from container and add to cauliflower and stir to combine thoroughly. Mixture should be thick.
With an ice cream scoop or 1/4 cup measuring cup, scoop mini “pizza crusts” onto a parchment lined baking sheet. Press on mounds to flatten slightly. Top with pepperoni slices. Bake for 25 to 30 minutes. Serve hot or at room temper
