This Caramel sauce recipe is Kaufmann 1 approved and should be enough for a small group or gathering. Great with green apples!
2 sticks plus 2 Tbsp butter
1 cup heavy cream
5 Tbsp monk fruit sweetener (or xylitol)
Melt butter in a sauce pan over medium heat.
Whisk in cream and sweetener.
Cook over medium heat, stirring often, 35 to 40 minutes until it thickens to desired consistency.
