This Breakfast Stuffed Sweet Potato recipe is great for those on the Kaufmann 2 diet. This recipe should yield about 4 servings.
Ingredients:
4 medium to large sweet potatoes
1 lb turkey breakfast sausage
8 strips of bacon (cut into pieces)
4 eggs (8 if really hungry)
1 avocado (sliced)
Directions:
Preheat oven to 375℉.
Line a baking sheet with parchment paper.
Wash and dry potatoes. Poke holes with a fork to vent.
Bake potatoes for about an hour until cooked through, turning after 30 minutes.
When done set aside, covered to keep warm.
In a skillet, cook turkey sausage until cooked through. Drain on paper towels and set aside to keep warm.
In the same skillet, cook bacon pieces until crisp. Drain on paper towels.
Cook your eggs, fried or scrambled.
Cut potatoes down the center, lengthwise, then squeeze to open. Be careful, potatoes will be hot.
Top with sausage and eggs.
Sprinkle with bacon and serve with sliced avocado on the side.
