Blueberry Muffins with Coconut Flour



6 organic eggs
6 Tbs organic butter (or coconut oil) slightly melted, not hot.
6 Tbs unsweetened applesauce
1 tsp vanilla extract
1/2 tsp sea salt
1/2 cup coconut flour
1 cup organic blueberries


Preheat oven to 400.

In a large bowl, combine eggs, butter, applesauce, vanilla, salt and coconut flour. Mix until smooth. Fold in blueberries.

Scoop into buttered or paper cup lined cupcake or muffin tins. Makes about 10 cupcake size muffins or 6 large muffins.

Bake for about 20 minutes or more until a toothpick is inserted and comes out clean. After 15 minutes, check tops of muffins and tent with foil to prevent burning.

Let cool for about 5 or 10 minutes and enjoy.
