Berry Cobbler

Kaufmann OneTry this delicious Kaufmann 1 Berry Cobbler for your next family dinner!

Ingredients:

Berry Cobbler Filling: 

2 cups blackberries
2 cups raspberries
1 cups blueberries
½ tsp xanthan gum
¾ to 1 cup monkfruit (or xylitol)
1 tsp cinnamon
½ tsp all spice
2 tsp lemon juice (about half a lemon)

Berry Cobbler Topping:

⅔ cup almond flour
¼ cup monk fruit (or xylitol)
½ tsp cinnamon
3 Tbsp butter (melted)

Whipped Cream:

½ cup heavy cream
5 to 10 drops liquid stevia
1 tsp vanilla

Directions:

Preheat the oven to 375℉.

In a small bowl mix the filling ingredients together.  Divide the mixture evenly between 6 ramekins or into a 9” pie pan.

In the same small bowl add the topping ingredients and mix together with damp hands.  It will be crumbly and that is ok.

Sprinkle the topping evenly over the filling.

Bake for 18 to 20 minutes or until the topping is golden. Remove from the oven and let cool for 5 mins.

While the cobbler is cooling make the whipped cream. Combine all the whipped cream ingredients in a large bowl.  Using a hand mixer; whip on high until fluffy and peaked, about 2 to 3 mins.

Top the cobblers with whipped cream just before serving.

Tips:

You can use frozen or fresh berries.

To make dairy free; use coconut oil in place of butter and coconut cream in place of heavy cream.
