Beet, Avocado and Walnut Salad

Salad
2 large red beets, cooked
2 cupd mixed salad greens
1 avocado
1/2 cups walnuts

Tahini Dressing
1/4 cup fresh mint leaves
1/4 cup parsley
1/4 cup lemon juice
1/4 cup tahini (sesame seed butter)
1/4 cup olive oil
1/2 cup water
1 clove garlic (optional)
pinch of sea salt

Place salad greens on a plate, slice beets and avocados on top of greens and add walnuts. Combine ingredients for dressing in a blender, put over salad. Serves 2
