8 ounces uncured turkey bacon
8 ounces skinless, boneless chicken breast, cut into chunks about 1 1/2 inch square
1/4 cup xylitol
1 teaspoon chile powder, or, if you like spicy, chipotle chile powder
Preheat oven to 350º.
Cut bacon strips in half crosswise. Wrap each piece of chicken with a half strip of turkey bacon. Secure with a toothpick.
Mix together xylitol and chile powder in a shallow dish. Roll chicken bites in mixture until well-coated, placing them onto a parchment-lined baking sheet as you complete them.
Bake for about 22 minutes, or until bacon is beginning to look crisp around the edges. Serve immediately.
