Apple Pie Smoothie

If the smell of apple pie is tempting you to abandon your Kaufmann 1 commitment, take heart! Try this smoothie with all the flavors of America’s favorite dessert without any of the added sugar or flour.

Ingredients:

1 cup creamy homemade almond milk. [To achieve a creamier consistency, use about 25% less water than usual/ about 1 cup almonds to 3 cups water.)
1 Granny Smith apple
1 teaspoon pastured butter or coconut oil
1/2 teaspoon vanilla
3/4 teaspoon apple pie spice
stevia or xylitol to taste, or 2 teaspoons pure maple syrup if you’re on Kaufmann 2
3-4 ice cubes, optional

Directions:

Peel, core and slice the apple thinly. Place in a small skillet along with the butter or oil and cook over low heat, stirring, until apples are tender and beginning to caramelize and sweeten.

In a blender, place apples, along with almond milk, vanilla, spice, sweetener and ice if a thicker consistency is desired. Blend until smooth and top with some freshly grated nutmeg if desired.

Quick Notes:

SHORTCUT: If you can find unsweetened applesauce made from any variety of green apples, substitute 1/2 cup for the apple and oil and skip the cooking.
ALTERNATIVE: You can also serve this hot, topped with a little whipped cream or coconut cream. Yummy!
