Stocking Your Kaufmann 1 Pantry

To reduce temptation and simplify meal planning, it would, ideally, be great to go through your pantry and eliminate all items that aren’t on Kaufmann 1. If for some reason this isn’t possible, a separate cupboard, or at the very least a shelf where everything there is an “allowed” option, might be a good idea.Following are two lists.

The first contains items not allowed on the Kaufmann 1 diet. The corresponding list has alternatives that work reasonably well for any of the items in the first list.

wine vinegar
rice vinegar

*apple cider vinegar, coconut vinegar


vegetable oil

almond oil, peanut oil
canola oil
*grape seed oil, olive oil,
walnut oil

peanut butter almond butter, cashew butter
sweetened coconut *dried, unsweetened coconut

sugar, brown or white

maple syrup

xylitol, stevia

sweetened chocolate unsweetened cocoa
soy sauce *coconut aminos

Dijon mustard with made
w/distilled vinegar
Dijon mustard made with apple

(white or whole wheat) 


*coconut flour, almond flour,
millet flour
corn starch

arrowroot flour 
tapioca flour
rice (brown or white)

wild rice
*quinoa flakes

*almonds, walnuts, cashews, 

baking powder containing aluminum
non-aluminum baking powder
*non-hydrogenated all vegetable
shortening, coconut oil
