Southwestern Salmon Hash

Kaufmann OneOur Southwestern Salmon Hash recipe is Kaufmann 1 approved and will yield 4 servings. We also have a short recipe video for this below, enjoy!

Ingredients:

1 lb fresh boneless/skinless salmon
½ cup chopped onion
½ cup chopped red bell pepper
1 jalapeño (seeded & chopped)
½ bunch of cilantro (chopped)
½ cup cooked quinoa
1 egg (slightly beaten)
Juice of half a lime
Salt and pepper to taste
1 to 2 Tbsp olive oil

Directions:

Roughly chop the salmon and transfer to a large bowl.

Add the onion, red pepper, jalapeño, cilantro, quinoa, egg, lime juice, salt and pepper.  Mix until well combined.

Heat the olive oil in skillet over medium high heat.

Add the mixture to the skillet and cook, stirring occasionally, until cooked through.

Serve by itself or over steamed vegetables, sweet potatoes or arugula.
