Simple Spicy Roasted Cauliflower



1 Head Cauliflower
1 1/2 Cups plain Greek Yogurt
1 Lime – Zest & Juice
2 Tbs. Chile Powder
1 Tbs. Cumin
1 Tbs. Garlic Powder
1 tsp. Curry Powder
2 tsp. Sea Salt
1 tsp. Black Pepper


Preheat oven to 400 degrees.

Lightly grease a foil lined baking sheet.

Trim the base of the cauliflower so it lays flat. Make sure to remove any green leaves and stems.

In a bowl combine all other ingredients: Yogurt, Lime Zest, Lime Juice, Chile Powder, Cumin, Garlic Powder, Curry Powder, Sea Salt, Black Pepper.

Dip the Cauliflower into the mixture and roll around to cover the entire top. Place it on the baking sheet and spread more of the mixture to make a thick coating all over the top and sides. (Save any extra yogurt mixture for other uses.)

Bake for about 40 minutes. Check by piercing with a skewer or pointed knife until desired tenderness.

Let cool for about 5 minutes. Slice and serve.
