2 C cooked quinoa
1/2 head radicchio, cored and thinly sliced
1/4-1/2 C dried apple juice sweetened dried blueberries
1/4-1/2 C pecans
1 C mixed greens
3T olive oil
1T apple cider vinegar
sea salt and pepper to taste
Combine quinoa, radicchio, blueberries, pecans and greens in large bowl. Mix olive oil and apple cider vinegar together and pour over salad. Add salt and pepper, toss and enjoy!
