Hummus Recipe

This Hummus recipe is Kaufmann 2 approved and will made about one and a half cups.

Ingredients:

15 oz can chickpeas (or 1½ cups cooked chickpeas)
¼ cup fresh lemon juice
2 Tbsp extra-virgin olive oil (plus more for serving)
1 to 2 garlic cloves (minced)
½ tsp ground cumin
½ tsp salt (more if desired)
2 to 3 Tbsp water

Directions:

Rinse and drain the chickpeas.

Using a food processor, add the chickpeas, lemon juice, olive oil, garlic, cumin, and salt.

Pulse a few times to start then process until smooth.  While processing, add water through feeding tube for desired consistency.

Add more salt or cumin to taste.

Scrape the sides and bottom of the bowl then process another 30 seconds or until well blended.

Serve drizzled with olive oil and or sprinkle on some paprika or more cumin.
